Autumn is here and it’s one of the best times of the year to get grilling. With restrictions in place due to the global health scare, cranking up your barbie will not only help you de-stress but will also offer some time away to explore your creativity. Keeping this in mind, we’ve compiled a list of easy-to-make barbecue recipes you and your family will thoroughly enjoy. So take off your grill cover and read on for some delicious grill time.
Barbecued Chicken Wraps
This is a no-fuss chicken wrap recipe. But make no mistake, it still packs a punch with its mighty good taste and fast prep time. Half an hour is all it will take to have your backyard assembly line of tasty barbecued chicken wraps. It’s also great for getting the kids involved with the cooking.
Ingredients:
- 2 Chicken Breasts
- 2 Tbsp Lemon Juice
- Chilli Flakes
- Olive Oil
- 1 Clove Crushed Garlic
- 1 Tomato Diced
- 1 Onion Finely Chopped
- ½ Cup Baby Rocket Leaves
- Whole Wheat Wraps
- Salt and Pepper to taste
Method:
Marinate the chicken breasts with salt, pepper, garlic, lemon juice, and olive oil. Leave aside for 10 minutes.
Place the marinated breasts on a hot grill or flat plate and cook each side till it changes colour to a light brown with crisped up edges. Let the chicken rest for a few minutes.
While the chicken is resting, heat some of the wraps and place them on serving plates.
Shred or cut the cooked chicken breasts across the grain into strips.
Arrange the chopped veggies on the wraps and place the chicken on top. A quick squeeze of lime and some garlic mayo on the side and your chicken wraps are good to go.
Lamb Chops With Potatoes
An all-time grill classic. Tender lamb chops with some spuds and veggies on the side and your backyard barbeque will be a hit in no time.
Ingredients:
- 2 Lamb Chops per person (preferably French dressed)
- 500g New Potatoes
- 1 Cup Cherry Tomatoes
- 1 Crushed Garlic Clove
- Zest of 1 Lemon
- 2 Tbsp Olive Oil
- 250 gm Baby Spinach
- Salt & Pepper to taste
Method:
Boil the potatoes until they become soft. Drain the water and keep aside.
Marinate the lamb chops and tomatoes together with lemon zest, 1 tablespoon olive oil, salt and pepper.
Place the marinated lamb and tomatoes on a hot grill and cook the chops till they’re well done on each side and the tomatoes have blistered. Remove from the grill and cover with foil and let it rest for a few minutes.
Heat 1 tablespoon olive oil in a pan, fry the crushed garlic and add potatoes. Crush the potatoes roughly with the back of your spatula and add spinach. Season as per your taste
Serve the lamb chops with the charred tomatoes and mashed potatoes.
Chicken Tikka With Naan
With this fast and easy chicken tikka recipe, you will forget those takeaway dinners in no time. Combine the succulent morsels of chicken with soft naan bread and you will have the most enjoyable barbeque meal of the lockdown.
Ingredients:
- 500 g Chicken Tenderloin
- 1 Cup Yoghurt
- 4 Tbsp Chicken Tikka Paste
- 2 Tbsp Garlic Paste
- 2 Tbsp Ginger Paste
- Salt to taste
- 1 Tbsp Vegetable Oil
- 1 pack Naan bread
- ½ cup of pickled onions
Method:
Cut the chicken tenderloin into bite-sized chunks.
To the yoghurt add chicken tikka paste, ginger & garlic paste and salt. Mix well and add the diced chicken. Mix well till the chicken is coated completely.
Place the chicken on a hot grill and cook till slightly charred. Remove from heat and keep covered.
Warm the Naan Bread on the grill. Cut into smaller pieces for plating.
Serve Chicken Tikka with Naan and pickled onions on the side.
Steak Sandwich
Nothing beats a good old steak sandwich. Simple yet wholesome, one bite of this easy recipe and your friends and family will be asking for more.
Ingredients:
- 5 Beef rump roast cut into thin strips.
- 1 Cup low-fat mayo
- 1 Chopped Tomato
- 1 Onion cut into rings
- 5 Pickled cucumbers sliced lengthwise
- 1 Cup Rocket Leaves or Baby Spinach
- 1 Loaf of Bread of your choice
- 1 Clove of crushed garlic
- 1 Tbsp Olive Oil
- Salt and pepper to taste
Method:
Preheat your barbecue grill to medium-high heat.
Season the steak strips with salt and pepper. Add garlic and olive oil.
Place the strips onto the hot grill and cook on each side for 1 minute or until they are cooked as per your preference.
Cut the bread into slices and heat through on the hot grill till slight char marks appear.
Spread mayonnaise on each slice and place the vegetable before topping up with the grilled steaks.
Serve hot with a side of sweet potato fries.
Mediterranean Style Grilled Snapper

Ingredients:
- 2 medium-sized snappers, cleaned and scaled.
- ½ Cup Olive Oil
- 2-3 Sprigs of Oregano
- Juice of 1 Lemon
- Lemon Slices
- Chopped Parsley

Method:
Heat your grill on medium-high.
With a sharp knife score the fish diagonally on each side.
Place lemon slices, and oregano sprigs within the fish’s cavity. Season to taste with salt.
Gently lay the fish on the hot grill and cook on each side till light brown colour. Lightly baste with olive oil and lemon juice while cooking.
Once cooked evenly on each side, place on a serving dish and pour remaining olive oil and lemon juice over the fish.
Serve hot with a side of baked potatoes and bread.
